Original Chutney

Greek Isles Spinach Pasta Salad

Ingredients

  • Dressing:
  • 4 TBLS red wine vinegar
  • 5 TBLS Mrs Ball's Original Chutney
  • 1 tsp garlic, crushed
  • 1 tsp dried oreganum
  • 8 TBLS olive oil
  • 3 TBLS lemon juice
  • Salt & coarse black pepper to season
  • Salad:
  • 3 cups baby spinach
  • ¾ cup red pepper OR cherry tomatoes, halved
  • 2 cups orzo pasta, cooked
  • 1 cup feta cheese cubes
  • ½ cup black olives, halved
  • ½ cup spring onion, thinly sliced
  • ½ cup garlic croutons (optional)

Directions:

1. Dressing: Add all ingredients into a food processor and blend until smooth. Adjust seasoning with salt and pepper. Cover and refrigerate for at least three hours (the longer, the better). 2. Salad: Arrange all salad ingredients on a platter. Drizzle liberally with salad dressing and serve.

Chef's tip:Serve with some garlic bread or flatbread. Great addition to meals.
