Spinach Pasta Salad

Ingredients

  • DRESSING:
  • 4 Tbs red wine vinegar
  • 5 Tbs Mrs Ball's Original Chutney
  • 1 tsp garlic, crushed
  • 1 tsp dried oreganum
  • 8 Tbs olive oil
  • 3 Tbs lemon juice
  • Salt and freshly ground black pepper to season
  • SALAD:
  • 3 cups baby spinach
  • ¾ cup red pepper or cherry tomatoes, halved
  • 2 cups orzo pasta, cooked al dente
  • 1 cup feta cheese, cubed
  • ½ cup black olives, halved
  • ½ cup spring onion, thinly sliced
  • ½ cup garlic croutons (optional)

Directions:

1. For the dressing: Combine all the ingredients in a food processor and blend until smooth. Adjust the seasoning with salt and pepper. Cover and refrigerate for at least 3 hours - the longer, the better. 2. For the salad: Arrange all the salad ingredients on a platter. Drizzle generously with the dressing and serve cold.

Chef's tip:Try this recipe with some garlic bread or flatbread as a wholesome addition.
